Manufacture
Benzyl Alcohol is produced naturally by many plants and fruits but is manufactured synthetically for commercial purposes. It is prepared by the hydrolysis of benzyl chloride using sodium hydroxide. Salicylic acid is prepared from dry sodium phenoxide in a stream of carbon dioxide. It is further purified by crystallizing the sodium salicylate from water at a temperature not exceeding 20 deg C. Sorbic acid is synthetically produced by aldol condensation of acetaldehyde to form crotonaldehyde which is then reacted with ketene to form sorbic acid.
